60ml Remy Martin XO washed with Wiltshire Truffles Black Truffle Butter
1 Demerara Sugar Cube
3 Dashes Angostura Bitters
Bar-spoon Soda Water

M E T O D
Add the the sugar and soda into a mixing glass, muddle the cube into the water, the water helps incorporate the sugar into the drink. Add 3 dashes of aromatic Angostura bitters followed by the Cognac washed with Black Truffle Butter (see recipe below). Add a few large chucks of ice into the mixing glass and stir, until properly chilled, strain the drink into a Old Fashioned tumbler with a large cube of ice. Garnish with an orange peel and ideally some freshly shaved black truffle.

To Make the Black Truffle Butter Washed Cognac:
Melt 100g fresh organic butter, pour into a mason jar or airtight container with 180ml Cognac and freshly shaved Black Truffle (the more you add the more intense the flavour will be) from Wiltshire Truffles. With the lid on tight, shake hard and let infuse in a warm place for 2-3 hours. Place in the freezer overnight. The butter will have frozen and solidified, remove and pass the liquid through a coffee filter or cheesecloth to remove any solids. Keep refrigerated and consume within 1 month.
